Cordon Bleu With A Twist

One of my favorite things to make is chicken cordon bleu. Ok maybe not to make but certainly to eat so I guess I enjoy making it because I then get to eat it? does that count?

What you will need:

  • Two (2) Chicken breast
  • Two (2) slices of ham of your preference
  • Two (2) slices of swiss cheese (or your favorite cheese – brie works great as well)
  • One (1) egg
  • Powdered garlic (and any other spices you’d like to use) to taste
  • Parsley to taste
  • Salt and pepper to taste
  • One (1) bag of Pork rinds (secret ingredient!)

How to make this delicious and easy dinner:

  1. Preheat over to 350°F
  2. Butterfly chicken breasts and pound to 1/4 inch thickness.
  3. Sprinkle chicken breasts with salt and pepper on both sides.
  4. Place 1 slice of cheese and 1 slice of ham in each chicken breast, fold down the middle and secure with a toothpick (if needed).
  5. Add the bag of pork rinds and all spices and blend until you get a crumb bread like texture using a blender or food processor. (The one I use is the Ninja Master Prep Professional Chopper, Blender, Food Processor).
  6. Dred chicken breast in egg mixture then coat with breadcrumbs. (you can replace the egg mixture with olive oil)
  7. Place in a greased oven-safe dish.
  8. Bake for 15 minutes, flip, Bake for another 10-15 minutes.
  9. Serve with parsley on top and your choice of sides.
