One of my favorite things to make is chicken cordon bleu. Ok maybe not to make but certainly to eat so I guess I enjoy making it because I then get to eat it? does that count?
What you will need:
- Two (2) Chicken breast
- Two (2) slices of ham of your preference
- Two (2) slices of swiss cheese (or your favorite cheese – brie works great as well)
- One (1) egg
- Powdered garlic (and any other spices you’d like to use) to taste
- Parsley to taste
- Salt and pepper to taste
- One (1) bag of Pork rinds (secret ingredient!)
How to make this delicious and easy dinner:
- Preheat over to 350°F
- Butterfly chicken breasts and pound to 1/4 inch thickness.
- Sprinkle chicken breasts with salt and pepper on both sides.
- Place 1 slice of cheese and 1 slice of ham in each chicken breast, fold down the middle and secure with a toothpick (if needed).
- Add the bag of pork rinds and all spices and blend until you get a crumb bread like texture using a blender or food processor. (The one I use is the Ninja Master Prep Professional Chopper, Blender, Food Processor).
- Dred chicken breast in egg mixture then coat with breadcrumbs. (you can replace the egg mixture with olive oil)
- Place in a greased oven-safe dish.
- Bake for 15 minutes, flip, Bake for another 10-15 minutes.
- Serve with parsley on top and your choice of sides.
